Venison Osso Buco


The Italian cut Osso Bucco is the literal translation “bones with holes or hollow bones” a hearty Italian cut of meat that adds the most of the full rich flavour of bone marrow to a dish. This is a Milanese cut most often served with a vivid yellow saffron risotto, made with bone marrow. The cut offers the connoisseur a chance to show their finest Italian inspired skills and the amateur cook to try a new taste sensation.
